Sunchoke, also called Jerusalem artichoke, is a vigorous perennial sunflower grown for its knobby, nutty-flavored tubers. It produces tall stems topped with small yellow blooms in late summer, adding bold structure and a pollinator-friendly presence to the garden. The tubers are harvested in fall and enjoyed roasted, puréed, or raw for their crisp, earthy taste.
Grown as both an ornamental and an edible crop, sunchoke works well at the back of a border or in a dedicated vegetable patch. Plants spread readily through underground tubers and can form dense colonies, so choose a site where their natural colonizing habit is welcome. Tubers store best in the ground over winter and can be lifted as needed.
