Red Malabar Spinach (Basella rubra) is a vigorous, heat-loving vining annual that thrives when regular spinach bolts and gives up. The thick, glossy leaves have a mild, slightly mucilaginous texture similar to spinach and are excellent stir-fried, sautéed, added to soups, or used fresh in salads. The striking red stems make it as ornamental as it is edible.
