A rewarding cool-season vegetable, it brings unusual color and texture to beds, borders, and containers, and can be harvested young for the tenderest eating quality.
Both the swollen stems and the leafy tops are useful in the kitchen; stems are excellent raw in slaws and salads or cooked in stir-fries, roasts, and soups, while the greens can be prepared like kale or collards. Plants grow quickly and steadily in cool weather, forming uniform, globe-shaped stems that hold well in the garden. Sow successionally for a steady supply, and harvest while stems are still young and tender for the best flavor and texture.
Species: Brassica oleracea Gongylodes Group
Variety: Purple Vienna
Type: Heirloom annual vegetable
Plant_Habit: Upright rosette forming a swollen stem
Sun: Full sun to partial shade
Soil: Fertile, well-drained, moisture-retentive loam
Days_to_Harvest: 55 to 65 days
Zones: 2 to 11
Germination: 7 to 14 days at 65 to 75F
Sowing: Start indoors 4 to 6 weeks before last frost or direct sow in cool weather
Spacing: 8 to 12 inches apart
Notes: Cool-season crop; sow in spring and again in late summer for fall harvest

//cdn.shopify.com/s/files/1/0717/4648/6408/files/il_fullxfull.7858966783_s8jz_80e76e06-c193-485b-a1dc-b810a656c28d.jpg?v=1791898610
https://www.natesgardensupply.com/products/100-seeds-purple-vienna-kohlrabi-heirloom-brassica-vegetable-garden-planting
